Sunflower seeds are rich in vitamins E, B1, B6, folate and minerals selenium and magnesium.
They are anti-inflammatory and reduce cholesterol. Great to prevent heart disease.
The selenium is great for detoxification and especially needed because our soils are so depleted these days.
Enjoy this sunflower butter on toast, crackers or spread on steamed vegetables.
2 cups sunflower seeds
½ cup sunflower oil, divided
½ teas fine sea salt
2 tbl vanilla bean paste (or seeds from 2 vanilla beans)
2 teas cinnamon
Zest of ½ lemon
Toast sunflower seeds with on stove or oven then let cool for 10 minutes.
Food process seeds with 1 tbl sunflower oil. Once smooth add the vanilla paste and cinnamon. Mix in using the pulse. Add remaining oil if sunflower butter is too thick. Finally add lemon zest.
