These were a big hit. A great snack to have around instead of biscuits. They actually turned out more like a biscuit and less like a scone but doesn’t matter. They were still good.
You need a dehydrator so if you don’t have one please invest. They open up a whole new world of food that is alive and contains the most nutrients.
2 cups carrot
2 cups apples
2 cups walnuts
2 cups sultanas
1 cup cranberries (can use other berries also)
1 cup flaxseed (also called linseed)
4 tbl raw agave nectar (if you don’t have any try honey or maple syrup)
1/4 cup lemon juice
2 tbl olive oil
2 tbl sesame seeds for sprinkling on top
Using a food processor grind walnuts and flaxseed. Set aside. Food process carrots and apples then combine all ingredients in a bowl. Massage together with hands to get everything mixed.
Using a ice-cream scoop, place half circles on dehydrator. Use teflex sheets or baking paper underneath. Sprinkle with sesame seeds.
Dehydrate at 110 degrees F for 15 hours then turn and continue for another 4 hours.
Will keep in the fridge for 2 months or for 2 months at room temperature, but I am sure they will be eaten really quick.
