This dish gives a real punch. I think it is the Jalapeno peppers that make the difference.
Great for stimulating digestion. Should be eaten towards the beginning of the meal.
Need
1/2 cabbage
2kg of vegetables. This can vary. I used carrots, beetroot, turnip, celery, zucchini and cauliflower
3 cups water
6 cloves garlic
3 jalapeno peppers
3 tbl salt
1 packet kefir culture. (You can buy this in most health food stores)
Blend the cabbage with salt, water, garlic, kefir and peppers.
Food process all the vegetables until a grated consistency.
Combine the blended cabbage mixture witht the vegetables.
Put in a jar and ensure no air bubbles. Put lid on and turn upside down for 3 hours.
Open jar and put a smaller jar within the opening so that air bubble can escape.
Let sit and ferment for up to 3 days.
Store in the fridge and eat a little bit at time with each meal.
